Award Winning New American Bistro located in the heart of Salt Lake City
In recent years, we’ve focused on taking on projects that align with our aesthetic, spark our passion, and involve clients we truly enjoy working with—people who are not only running compelling businesses but are also honest, talented, and fascinating people with incredible vision.
In August 2011, I was contacted by Rocky Derrick—a former client, high school friend, and ski buddy—about a bold new venture. He and his partner, Drew Eastman, were launching an American bistro in downtown Salt Lake City. Despite the challenges of a tough economy and a unique local market, the project immediately stood out. The historic building they were revitalizing, along with the talented team involved—including Patch Davis (Patch Davis Design), Cody Derrick (The City Home Collective), and artist Courtney Miles Derrick—made it clear this was something special. We knew we had to be a part of it.
Suffice it to say, the restaurant turned out to be the masterpiece it was designed to be and with the addition of renown Chef Buzz Willy – fresh out of San Francisco, the place has never been empty. The reviews are in, and as expected Pallet has been a great success and a much needed alternative to Utah’s dining culture.
